Cookie Countdown Day 6

COOKIE COUNTDOWN  Day 6!

'Tis the season to be baking!  
Seems like everyone I know is in the holiday baking mood... the grocery store is crazy busy and Facebook is all a-buzz with posts about baking-this and baking-that!

I am doing the desserts for a holiday party tomorrow night, and have been in my kitchen ALL day.  Well, except to run to the grocery store a couple of times, and to do a couple of other errands.  My feet are soooo tired!  I am baked-OUT!  
When these goodies all run out, my family is eating Oreos.  Seriously.  Or Chips Ahoy.  Whatever they want to buy, when THEY go to the store.

I think I am going to just go back to sewing.  
(Oh, and I gotta wrap christmas gifts...)

OK. Well. Ready for another recipe?

These are just called 3-Layer Cookies.  Yummy!


First, LAYER #1:
2 cubes butter (one cube = one stick = 1/2 cup!)
1/2 cup sugar
1/8 tsp salt
2 cups flour
1/2 cup cornstarch
Mix and press into a cookie sheet. Bake at 300 for 15 minutes.

There's been some confusion...am I the only one (besides my mom!) who says CUBES of butter?  A cube is a stick. You know, a 1/2 cup of buttery goodness.  In a cube. 

Liz made me buy a REAL  mixer a couple of years ago when she was visiting. Thank you Liz, I would have DIED today without my fun red KitchenAid!


I have made 12 pans of various cookies like this in the last couple of days. My fingers hurt from all that pressing!
NEXT, Layer #2:
3 cups brown sugar
4 eggs
4 Tbsp flour
1/2 tsp baking powder
2 tsp vanilla
2 cups chopped nuts (I used pecans)
Small pkg coconut (about 7 oz)
Mix and pour over crust. Bake at 300 for 15 min, then raise to 350 for 15 min more.

The BEST vanilla.  From Trader Joe's.

I had this cool chopper. I should cook more often...I forget what's in those cupboards!






THEN, Layer #3:
1 cube butter
1 lb powdered sugar
8 oz cream cheese
1 tsp vanilla
Mix together and 'frost'. Chill and cut into 1" squares.

I am really really good at making icing. I lost count of how many bowls of various kinds of icing I made today! By the end of the day, I couldn't even THINK about licking the spoon.  Blech.

Just spread a big ol' thick layer of frosting on there!

Chillin' in the fridge.  Sorry no pic of the little bite size cookies all cut up and cute on a plate. I am going to bed!

This is what I look like after all day of being in the kitchen.  Scary.

  2. Wow, you have been baking like crazy, hope you had a good sleep after all your baking. I bought a white KitchenAid Mixer a few years ago and I just love it, best mixer ever!!

  8. Yummy!! I can relate to how you feel after a full day of baking... A couple years ago, I decided to give away gift baggies of homemade cookies, and I wanted a huge variety, so I pulled out all my favorite recipes and baked and baked and baked.... By the time I was finished, I didn't think I ever wanted to see another cookie (*that* didn't last too long! ;-) Everyone LOVED the cookies, and I got lots of thanks and requests for recipes! :-) Homemade goodies are the BEST!

  10. THIS IS A QUICK+YUMMY ONE: NO-BAKE NUTTY BARS

    2 jars (16 oz.) dry-roasted salted peanuts
    4 tablespoons butter
    1 bag (10 oz.) peanut butter chips
    1 can sweetened condensed milk
    1 bag (16 oz.) miniature marshmallows

    Grease bottom of 9x13 pan.Pour 1 jar of nuts into pan+spread one even layer. Set aside. In large saucepan over medium heat, melt butter+ peanut butter chips together, stirring. Warm can of sweetened condensed milk by running it under hot water or placing it in a bowl of hot water for about 5 minutes. Pour sweetened condensed milk into the chip/butter mixture and stir until blended. Remove from heat, add marshmallows+stir quickly. (Some of the marshmallows will melt, most will not, that's how you want them...overcooking and melting all the marshmallows will make for a very soft center.) Pour mixture over nuts in pan. Add remaining jar of nuts to the top of mixture and press down gently with the back of a spatula. Refrigerate for 4 hours before cutting 1x2-inch bars=30 bars.

  12. such yummy-looking cookies! all your cookies are! looks like you need a break, though. back in the day, i made christmas cookies for the kids when they were in grade school. i made the last batch when the baby was in third grade and never made another batch for 35 years.

  18. Another great recipe. I can totally empathize with the comment about not wanting to taste any more icing; been there, done that, and could "feel" exactly what you meant!! Give it one day to pass and you'll be fine for more tasting!!

    Thanks for the tip on Trader Joe's Vanilla extract. We have one coming to our area soon and I can't wait to go!

  22. I feel your pain! But I also love Christmas cookies. I like your bar cookie recipes because they make a lot. I bought a 2 pound bag of sliced almonds at Costco (where else). I have been using them on salads, but I think they'd go good in this recipe and I could skip the nut chopping part. I do have one of those choppers. Works great for tons of garlic when I'm making homemade tomato sauce.

  24. These 3 layer bars look delicious. I am glad you mentioned the cubes of butter. I thought you meant a stick and a few years ago, our butter did come in the cubes but then back to the sticks. Thanks for the recipe. Just think, you will be all done with your CHristmas baking by the end of the week.

  27. I love my Kitchenaid, I would hate to cook without it. I also have the Kitchenaid food processor - if you don't have one get one! They are awesome.
